THE PERFECT SIZE

An oven that is too big will take longer to heat and consume more fuel (wood) to maintain the correct temperature.

A lot of time and effort has been put in to designing the oven to make it an efficient performer. Our oven can easily accommodate two family size pizzas at once, but how many pizzas you can fit at one time is not relevant, once you understand how to cook in a wood fired oven.

There are a lot of factors that make a great oven, and they are all very important, size and shape is in the top three. The oven door opening is large enough to accommodate a large camp oven and the oven floor can easily accommodate 2 or 3 bread or baking trays.

WHAT IS THE OVEN MADE OF?

A common misconception is that a wood fired oven should be made of bricks, however solid brick ovens take many hours to reach cooking temperature making them far less time and fuel efficient. Our ovens feature a 65mm thick dome hand laid from castable refractory cement.

The oven floor consists of 50mm thick refractory tiles laid on top of 25mm Calcium silicate board to ensure the oven holds heat within the oven.

A layer of bio-soluble insulation blanket is installed over the dome/oven body and then wrapped in wire reinforcing mesh before finishing with two layers of render.

WHAT CAN I COOK IN MY OVEN?

Wood fired ovens were around well before gas or electricity, so what you can cook in them is really only up to your imagination. Our Australian made ovens have been designed to be used with and without the door to give maximum heat control. Stewing, roasting, baking, frying, smoking, grilling, pizza, bread, steak and even dessert.

WILL MY OVEN SMOKE?

Yes! All ovens smoke, but it should only last for the first 10 minutes after you light it. As the temperature increases and stabilises the smoke will disappear. Your oven will also smoke if you burn green or wet wood, or if you starve it from oxygen too soon while it is heating up.

HOW LONG WILL THE OVEN TAKE TO WARM UP?

The short answer is 60-90 minutes for pizza, but it really depends on what you want to cook, and the temperature required.Any oven can achieve air temperature very quickly, but this is only part of the story.

To cook great food, you need constant and consistent heat throughout the oven space. After lighting, heat is initially stored in the body of the oven and then reflected into the floor.

Traditional Pizza Napoletana will take only 80-90 seconds to cook at an oven air temperature around 4350C, but you also need the correct floor temperature.

It is not uncommon for our ovens to still hold temperatures over 2000C the next morning after use.

INSIDE OR OUTSIDE...?

Your oven can be installed under the cover of your patio or entertaining area (with a flue up through the roof) or out in your yard or garden area. If exposed directly to Mother nature, you will need to do a little more maintenance to keep moisture and the sun at bay. This can be as simple as a coat of sealer once each year when needed. We can also supply you with a custom-made full weather cover to protect your oven from the elements.Installing the flue system through your patio ceiling and roof is quite easy in most cases and very safe. Flue systems that penetrate Your ceiling or roof must be installed by a licenced Builder or Plumber and a compliance certificate must be issued upon completion to ensure that your home insurance is not affected.

DIY OR DO IT FOR YOU.

Our ovens are supplied as a DIY kit that can be assembled by anyone with basic handyman skills over a weekend. We supply detailed step by step instructions with colour pictures to help guide you through the process. We are also only a phone call away if you need guidance and advice along the way.

If you are not confident or don’t have the time to build your oven yourself, we have a team of recommended tradespeople who can assemble your oven for you.
